Available all year round and with a stronger flavor than fresh garlic, it is normally consumed after peeling and deprived of the soul. Remember that it does not tolerate excessive cooking, because it tends to make it bitter: the best advice is to cook it slowly, over low heat. If you want a sweeter flavor, leave it in your shirt, without depriving it of the skin and lightly crush it: in this way it will flavor your preparation and you can remove it as soon as it has fulfilled its purpose. It is kept for up to one year away from moisture, heat and light and is great for preparing the aioli sauce.
